Donut dough: mix 100 ml milk with yeast and sugar, leave to rise for about 10 minutes.

Sift the flour, add the milk composition with yeast, egg yolk, salt, melted butter and the rest of the milk. The resulting dough should be softer. Leave the dough to rise until it doubles in volume (15-20 minutes).

Divide the dough in half, spread a sheet of 0.5 cm that we cut in circles (with a glass or a special shape). Let the discs cut for another 10 minutes. Until then, prepare the filling.

Filling: mix cottage cheese with powdered sugar and vanilla sugar, 2 egg yolks and 100 g raisins.

We fill the cut circles, two by two. Put the cottage cheese (as much as possible) on a disk, then place another disk on top. With a fork (teeth powdered with flour) we press the edges of the discs.

Place the donuts in a tray lined with baking paper.

Put the tray in the preheated oven, let it simmer for 10 minutes, then reduce the heat. Baking time: 30-35 minutes.

But I rarely prepare them, just to limit the consumption of fried foods in an oil bath. The best donuts I've ever eaten were made by my grandmother. Don't think that he had a secret recipe after which he made them. He kept about a quarter of the bread dough and from that dough he made us donuts that he cut with a knife and fried them in hot oil.

You couldn't find two that had the same shape or dimensions, but who's looking at this? We sprinkled them with caster sugar because we didn't have powdered sugar, and we ate them hot. They were crazy! My mother fried them, and I, my brother and my cousin took them one by one and ate them breathlessly. Whoever was faster, took 2-3 pieces and ran through the yard so as not to be caught by the other two and dispossessed of the precious donuts. Tell me if these are not beautiful memories? Together with cake with grated dough, were the desserts of our childhood.

For the sake of these memories, I made this recipe for baked donuts, fluffy, fragrant but without being fried in oil. The dough is simple, donut-flavored, flavored with vanilla and lemon peel. 5. Lift each piece of dough thus elongated from the center and twist the two segments as well as possible, sticking them to the end.

6. Let the twisted donuts rise for 30 minutes, and in the middle of the interval turn them on the opposite side, so that they grow evenly.

7. Fry the donuts twisted in hot oil, over low-medium heat, until well browned on all sides.

8. Drain them and remove them in a mixture of powdered sugar or fine sugar, combined with cinnamon to taste.
