  1. Wash and stem the elderberries. Place them in a saucepan with a very small amount of water, cinnamon stick and lemon peel. Boil until berries burst, about 10 minutes.
  2. Strain the mixture to get rid of seeds and return the liquid to the saucepan. Add the sugar and bring to the boil, stirring. Boil until the jam thickens.
  3. Pour into sterilised jars and place the lids on tightly.

Read more also, i did not air out the jam as the recipe recommends. i ladled the thin jam into sterilized pint jars, and processed in the canning pot 20 mintues. the jam thickened in the jars within a couple days. How to make it

  • First you need to find the berries:
  • It is easier if you drive a car, but you dont have to drive. In the month of September drive your car on a highway that runs parallel with a set of railroad tracks, or better yet a trail on a berm that was old railroad tracks. Look in the land area along the ditch of the highway and the berm of the RR tracks. The elderberry bush with look like a large burgandy colored mass. And then about a 1/4 mile up you will begin to see 3 or 4 large burgandy masses, and then you need to park to get a closer look. Elderberry also frequently grows along unmowed land adjacent to industrial parks in full sunlight. you can identify the plants in the spring by their large multi-flowered white umbels. The plant fully grown is 8 feet, so use caution when picking the berries while standing on a trail. if the top of the plant is at eye level you have a five foot drop to the bottom of the ditch. Watch your footing and only pick those berries you can easily reach. Remember there are more plants a little further up.
  • Put all the ingredients into a pan and simmer until a small quantity, put on a plate, wrinkles when cold. Remove balm. Pour into hot sterized jars and cover.

Elderberries are one of the UK’s unsung summer fruits, and they can often be found in gardens and hedgerows ready for picking from late summer to autumn. While they’re not that tasty eaten raw, cooking or preserving them will unlock their sweet flavour. Our collection of elderberry recipes tells you just how to do that.

One of the best ways to use elderberries is to make them into a syrup or cordial, to make delicious fruity drinks and cocktails (such as this Elderberry Kir Royale). You can also leave the berries to infuse their flavour into spirits – Elderberry gin is particularly tasty. Elderberry vinegar is fantastic for using in salad dressings and sauces, while Elderberry jam is simple to make. And if you’ve found some elderberries but they’re not quite ripe yet, pick some anyway – you can create Elderberry capers by packing the unripe berries in salt.

When cooking with elderberries, always discard the stems as they are slightly toxic. The best way to separate the berries is to run the prongs of a fork through the stems over a bowl.

Old Fashioned Elderberry Pie Recipe

1 quart of ripe elderberries
1 cup of sugar
A little pastry flour

Wash and drain the berries. Stir sugar well into fruit and turn into a pie pan lined with crust. Sprinkle a little flour over the filling to absorb juice, and cover with an upper crust.

Bake for 40 minutes (450°F for 15 minutes 425°F for 25 minutes). Serve cold with a little sugar sifted over top.

Elderberries are easily preserved for making a homemade elderberry pie recipe in the winter months.

Or spread elderberry jam or jelly on fresh bread or scones anytime for a quick-and-easy table dessert.

Wash selected elderberries in cold water and drain in colander. Pack the berries in sterilized jars.

Fill with hot syrup (1/4 cup of sugar to 1 cup of water). Steam until tender with jar tops loosely covered. Fill jars with boiling syrup, apply rubber rings, and seal.

Old Time Elderberry and Crabapple Jelly

Cover equal quantities of elderberries and cut crabapples with water and cook until entirely soft. Mash so that fruit is thoroughly broken up. Strain the juice through a jelly bag.

Boil juice 10 to 20 minutes and test for pectin. Add 3/4 cup of sugar to 1 cup of juice and allow to boil gently for 8 to 10 minutes.

Place juice in sterile glasses and let stand until cold. Cover and seal with paraffin.

My wife and I live nearby the old farm where I was raised, and alongside the creek flowing next to our house (above), we have a wild elderberry bush or two which we make use of in season.

We've also seen people driving on country roads looking for elderberry bushes growing along the roadside ditches. Nature's bounty!

The common North American elderberry, Sambucus canadensis, is an easy shrub to spot, once you become familiar with its leafy appearance and clusters of fruit.

The fruit is fully ripe by mid-to-late summer. You need to pick elderberries quickly, though, before the birds beat you to it. The cluster pictured below has already been picked at by wild birds.

It is possible to grow wild elderberries at home in your garden, but they can be difficult to transplant, and they need sufficient moisture to grow.

However, if you're looking for plants or cuttings to transplant, you'll find elderberries growing wild throughout much of eastern North America and some parts of Europe, often near creeks and areas of moist soil.

Early spring is the recommended time for planting. An excellent Fact Sheet on Elderberries for Home Gardens can be found on the Ontario Ministry of Agriculture and Food website.

Elderberries are rarely found for sale in farmer's markets and supermarkets since they are not a significant commercial crop, yet it is worth watching for them when they're in season, and before the wild birds get them.

Dried elderberries can be found at health food stores as an alternative, and they can be used in the old fashioned elderberry pie recipes in a pinch, though fresh berries will always taste better.

Rich and Sweet Elderberry Jelly Recipe

This time of the year, hedgerows are beginning to fill with autumn bounty. Rose-hips, crab apples, mushrooms, blackberries, and one of my favourites — elderberries. Rich in vitamin C and sweet flavor, you can use them to make all sorts of delicious preserves. One of the easiest and most versatile is this simple elderberry jelly recipe. Spread it on toast, serve with a cheeseboard, or dollop it on savory dishes like Swedish meatballs.

The flavor of elderberries is rich and juicy but has an earthy-wildness to it that’s hard to place. Trust me when I say that it’s delicious and well-worth an autumn tromp to find them. For this recipe, you only need a handful of ingredients, basic kitchen equipment, and a few jars. Feel free to double or triple the recipe for even more jars of dark jewel-like preserves.

You shouldn’t eat elderberries or elderberry juice raw since it can cause belly aches. Cooking the berries makes them safe.

In North America, you’ll have the European elder to forage from but also the blueberry elder and American elder. All are very similar, although the blueberry elder has different leaves from the other two. Elderberries are easy to identify but always triple-check that you’re picking the correct berry before eating it.

Be responsible, respectful, and sensible when foraging for wild food. If it’s on private land, ask permission, and never take more than your fair share. Also remember, that as developments encroach on the wild, many plants and animals are becoming threatened. Even foragers are contributing to their demise.

There are a lot of easy to identify wild foods in autumn, but if you find a tree laden with berries or nuts, remember that animals rely on them to survive. My personal rule is to only take a maximum of ten-percent when foraging. For fruit and berries that I grow in the garden, I leave at least ten percent for the birds. That way you’re happy and the local birds, hedgehogs, mammals, and eco-system are happy too.
