  • For a small cake tray (approx. 24x10cm):
  • 3 egg whites
  • 1 pinch of salt
  • 7 tablespoons sugar (120 g)
  • 6 tablespoons flour (90 g)
  • 4 tablespoons oil
  • 4 tablespoons milk
  • 1/2 sachet baking powder
  • 1 vial of vanilla essence
  • 4 squares of chocolate chip cookies
  • 1 tablespoon ground walnuts
  • 4-5 dehydrated plums

Preparation time: less than 60 minutes

RECIPE PREPARATION Eggplant cake with walnuts, chocolate and dehydrated plums:

Mix the egg whites with the salt powder until they froth, then gradually add the sugar, oil and milk and continue to mix.

Slowly incorporate the flour mixed with the baking powder using a spatula.

Add the ground walnuts, chocolate and prunes cut into small pieces and mix until everything is incorporated.

We line the cake tray with baking paper and pour the composition.

Preheat the oven and put the tray in the oven for about 35-40 minutes on low-medium heat until it passes the toothpick test.
