There rice cake, or the rice tarte, is a delicious and unusual dessert that has very ancient origins. Apparently it was prepared for the Corpus Domini celebrations, during the month of May, in Emilia. On this occasion it was customary to decorate windows and balconies with colored drapes, for this reason the rice cake is also known as "decoration cake".
A little like in all traditional recipes, also in this one there are different variations: raisins, pine nuts, cedar, candied fruit and spices are the ingredients that each family chooses to add, following the historic family recipe. Some time ago I tried a chocolate variant for example, but this time I opted for something more traditional.

How to make rice cake
Put the milk with the lemon peel, the vanilla essence and the rice in a saucepan.
Bring to a boil and cook for 15 minutes, then lift the lemon peel and let it cool.
Beat the eggs with the sugar for about 10 minutes and then add the cinnamon.
Now incorporate the rice and pour it all into a mold lined with parchment paper.
Bake in a preheated oven at 180 ° C for 40 minutes.
Leave to cool and serve your rice cake with icing sugar.
