Focaccia with olives is an easy and quick recipe to prepare, ideal to serve instead of bread or cut into small pieces and served as an appetizer to accompany a cheese platter. Among the many recipes to make this type of dough, I followed one that involved the use of sparkling water to prepare the focaccia, then I added the pitted green olives and ate a really super focaccia!
How to make focaccia with olives
Place the flour in a fountain and pour the slightly warm water in the center with the dissolved yeast inside.
Start kneading, then add the sparkling water and continue working. When the dough is smooth and elastic, add 1 teaspoon of salt to the dough, 2 tablespoons of oil and knead for a few more minutes, then let it rise.
Cover the bowl with cling film and let it rise for 1 hour and a half.
Once the dough has risen, add the pitted olives to the dough, leaving a few apart to spread them on the focaccia at the end.
Grease a baking tray and roll out the dough into a sheet of about 1 cm thick.
Shore the surface with your fingers, brush the olive focaccia with 2 tablespoons of oil and sprinkle with a little coarse salt and the remaining olives.
Let it rise for another 30 minutes.
Bake the focaccia with olives in a hot oven at 200 ° C for 25 minutes.
Then cut the focaccia into wedges and serve :)
